Uni Pasta (うにパスタ) is a creamy Japanese-style pasta starring sea urchin. In this recipe, we have al-dente spaghetti coated with a luscious orange sauce made with fresh sea urchin, heavy cream, and white wine. The ingredients for the pasta are very simple, yet the sweet and salty uni flavor takes the center stage.

Directions. Using a rubber spatula, pass the raw uni through a fine mesh tami, making a purée. Reserve chilled. Whip butter in a Kitchen Aid mixer until soft and lightly whipped. Fold in the uni purée and gently mix. Scrape the sides of bowl throughout to ensure that all butter is incorporated into uni. While still mixing, add lemon juice.

Allow mixture to sit at room temperature until sediments sink to the bottom of the bowl, about 2 hours. Shuck oysters; place 2 oysters in each shooter glass. Set pan over high heat and cook, stirring and swirling constantly, until the sauce comes together and develops a creamy consistency and the pasta is fully cooked, about 1 minute. Add more pasta water as necessary to thin the sauce if it over-thickens. Season to taste with salt and black pepper.

Uni (雲丹) [pronounced 'oo-nee'] is the Japanese name for the edible parts of sea urchin. It comes in various colors, from pale yellow to vivid orange, and tastes like a salty and creamy umami bomb. In Japan, it's a prized ingredient eaten as gunkan maki (軍艦巻き "battleship roll") sushi with nori seaweed wrapped around sushi.

Instructions. Boil water in a medium sized pot on high, add enough salt so it tastes like the sea. Add the pasta to the water, let the water get back to a boil then drop the heat to about medium, so you maintain a low boil. Fresh pasta takes around 2-3 minutes, dried pasta will take longer.
