Pink Chia Pudding The Wholefood Collective

This Pink Pudding Dessert was one of my favorites as a kid. It has a light and foamy texture and is sweet yet has a little bit of tartness from the pineapple as well. Bring to a simmer then remove from the heat. In a large bowl, whisk together the sugar and egg yolks, until the mixture has gone pale in colour and doubled in size. Let the agar agar cook in low heat. Keep stirring constantly. In couple of minutes, the mixture will start thickening.
