This nectarine jam is a riff on my Easy Peach Jam, with one noticeable difference. I cut back on the sugar here because I also found some summer apples, the zestar variety, at the farmstand. These early apples are high naturally occurring pectin. There's no need to peel them, especially since the skins are packed with pectin.
