Preheat the oven to 375˚F (190˚C). Line a large rimmed baking sheet with aluminum foil. Slice the dates open lengthwise on one side (being sure not to slice all the way through the date). Remove the pits. Stuff each date with about ½ teaspoon of goat cheese, and nestle an almond in the middle.

Instructions. Preheat oven to 425°F. Line a baking sheet with foil and place a rack on the baking sheet. Optional: Cut a small slice in each date and fill with 1 almond or 1 teaspoon cheese. Wrap bacon around each date and secure with a toothpick. Combine maple syrup and sriracha.

Pinch the sides of the dates together to seal the opening then wrap each date with 1/2 a piece of the bacon and set aside. In a small bowl mix together the honey, salt, pepper and rosemary. Heat 1 tablespoon of olive oil over medium-high.

Bake them in a preheated oven at 400°F for 15 minutes. Flip and cook for another 15 minutes or until the bacon is evenly cooked and crispy. While the dates are baking, melt the butter in a small saucepan over medium-high heat. Whisk in the brown sugar and maple syrup and continue to simmer for about 5 to 8 minutes, or until the sauce thickens.
