Scrape the minced peppers into an 8 quart stainless steel pot. Repeat with the remaining peppers. This is the remaining pepper detritus. This should go straight into the compost. Do not pass go! Stir the cider vinegar and powdered pectin into the minced peppers and place over 'HIGH' heat.

Directions. Stir the vinegar and sugar in a saucepan over medium-high heat until the sugar has dissolved, then stir in the carrot and red bell pepper. Bring to a boil, reduce heat to medium, and simmer 5 minutes. Add the habanero peppers and simmer 5 minutes longer. Pour in the pectin, and boil for 1 minute, stirring constantly.

Made this sauce today but multiplied the recipe by 5 (yes we had that many habaneros!). Easy to create and process into shelf stable jars. However, I don't believe the photos at the top of this recipe are of the hot sauce results. The photos at the top look like a Jelly/jam and this sauce is opaque, not clear.

Add the onion, peppers and sugar. Bring to a boil over high heat, stirring constantly, until the mixture comes to a full boil that can not be stirred down. Add the pectin and boil for 1 minute, stirring constantly. Remove from heat and skim off any foam. Pour the jelly into the hot jars to 1/4 inch from the top.

Centre sealing disc on clean jar rim.
