In a large skillet, heat olive oil over medium heat. Add sliced chorizo, bell pepper, and onion. Cook until chorizo is crispy and vegetables are tender. 1. Preheat your oven to 220°C/200°C fan/gas mark 7. Peel and grate the garlic (or use a garlic press). Lay the chicken thighs flat onto a baking tray. Drizzle with oil, season with salt and pepper, then add the chipotle paste and garlic. Mix to coat well.

You can make up to this point 2 hrs ahead. Heat oven to 180C/fan 160C/gas 4. Cook the tortillas for 3 mins. Using a fish slice, turn each one over.
